Ready in minutes, these quick and easy quesadillas make a tasty snack for pairing with Georgian Bay Tequila Smash™.

Ingredients:

2 cups (500 mL) shredded rotisserie chicken

1/3 cup (75 mL) barbecue sauce

1/4 cup (60 mL) diced red onion

1/4 cup (60 mL) diced pickled jalapeño peppers

2 cups (500 mL) shredded Monterey Jack cheese, divided

4 large flour tortillas (10-inch/25 cm)

2 tbsp (30 mL) olive oil

1 cup (250 mL) guacamole, for serving

Directions:

In a bowl, toss chicken with barbecue sauce until well coated. Stir in red onion and pickled jalapeños.

Sprinkle 1/4 cup (60 mL) cheese over half of each tortilla; top with chicken mixture. Sprinkle with remaining cheese. Fold over tortilla to enclose filling.

Brush 1 tbsp (15 mL) oil over bottom of large skillet set over medium heat; in 2 batches, cook quesadillas for 2 to 3 minutes per side or until golden brown and cheese melts, adding remaining oil as needed. Cut each quesadilla into 3 wedges. Serve with guacamole and Tequila Smash™.

Tip: Alternatively, grill quesadillas on barbecue preheated to medium heat for 2 to 3 minutes per side or until well marked, toasted and cheese melts.
