Crafted in partnership with Collingwood Kombucha Company. Kombucha has so many characteristics that translate well to cocktails: acid (since it’s quite tart), a little sugar, and a little fizz. Just add Georgian Bay Gin® and you’ve got a mighty tasty cocktail.


1.5 oz Georgian Bay Gin®
0.5 oz Lemon Juice
1 oz Pineapple juice
0.5 oz Black charcoal syrup**

  1. To make the black charcoal syrup, start off with a classic simple syrup. Over medium-high heat in a saucepan add 1:1 sugar and water. Heat until sugar is dissolved and take off the heat. In the 1.5 oz of syrup, you will be using add in a teaspoon of activated charcoal. This will give the cocktail a nice dark colour. Feel free to use the remainder of the simple syrup for other cocktails!
  2. In a shaker tin add in Georgian Bay Gin, cilantro, lemon juice, pineapple juice, and black charcoal syrup. Note: not everyone loves cilantro so feel free to opt this out, and/or add in your favourite herb.
  3. Add in ice and shake for 15 seconds.
  4. Strain into a rocks glass with ice and top up with Collingwood Kombucha - Black Lemonade. Garnish with a lemon wheel and enjoy!
